Egg Dos Curry

Ingredients:

2 eggs
1 medium size potato
3-4 cauliflower florets
1 big size onions
2 flakes garlic
small piece ginger
1 finely chopped green chillies
1/4 tbsp coriander & cummin seed powder
1/4 tbsp red chilly powder
1/6 tbsp turmeric powder
1 medium size tomato
chopped coriander leaves for garnishing
3-4 tbsp oil
salt to taste

Method:

Boil eggs, remove the cover. Heat oil in the pan and one-by-one fry the boiled eggs as well as cauliflower florets with potato wedges and keep them aside. Add little more oil in the pan and add onions, green chillies, ginger & garlic paste in it. Fry onions till it turn to brown colour. Add tomatoes and fry it properly. Add red chilli powder, turmeric powder, coriander & cummin seeds powder & salt and stir and leave for 1-2 minutes. Then add little water with this above paste and add fried cauliflower florets with potato wedges & eggs. Stir it, cover the pan and let it cook for 15 minutes. Remove the cover of the pan and garnish it with coriander leaves.
